Young reds can be firm and a little unresolved, with tannins that need food or air to soften. An aged red has done that work already. The fruit has mellowed from bright to deep, the tannins have smoothed out, and savoury, complex notes have developed that simply do not exist in a young wine. 📖 Chile is one of the few wine countries never touched by phylloxera, the vine louse that destroyed European vineyards in the 1800s.
