Most people know Port as a dark, sweet red drunk after dinner. White Port is the other half of the story — made from white Douro grapes in the same fortified style, but served cold, before the meal rather than after it.
In Portugal the standard serve is Porto Tónico: white Port over plenty of ice, topped with tonic water and a slice of orange or a sprig of mint. It is long, refreshing and far lighter than the bottle suggests — closer to a spritz than to a dessert wine. Drunk neat and chilled it is nutty, gently sweet and genuinely good on its own.
